How to butcher a beef tenderloin.

I got a whole beef tenderloin with the silver skin on, chain, head, tail. Everything.  I started on it and decided, wait a sec. Better take a look at how to do this properly. I found this video helpful.

Here’s what mine looked like after following the video.  It started out just like the one in the video.  Same package and everything.

Knife Techniques

I love Alton Brown. I also love a good set of knives.  A good-quality knife is so important to cooking.  Especially in the time it saves prepping food.

I’ve had the same set of Henckels’ knives since my bridal shower.  So, we’re talking almost 17 years.  I think that’s how long I’ve been married. I don’t know, but, whatever…..
